VENETIAN — Tao Beach plans to celebrate the 2013 season with a grand opening on May 4 that includes a new Sunday brunch. Look for Fortune Waffles, Kobe steak and eggs, an XO Omelet and Kung Pao chicken wings. The brunch menu will be offered all day on Sundays. MANDALAY BAY — Crossroads at House of Blues now has a new breakfast menu and expanded breakfast hours from 7 a.m. to 11:30 a.m. daily. Look for a bacon avocado eggs Benedict; breakfast burger with a kick made with andouille sausage, pepper jack cheese and a sunny side egg on a brioche bun; the Rock Steady Skillet featuring cage free eggs, applewood bacon, red rose potatoes, green chiles, green onions, jack cheese and pico de gallo; and the Super Fuel, an omelet made with grilled chicken, sautéed mushrooms, cheddar cheese and topped with avocado and brie cheese. Other new entrees include a Vegas omelet with Swiss cheese, Black Forest ham, fresh spinach, fresh garlic, sundried tomatoes and topped with house-made Hollandaise sauce; Big Ole' Flapjacks topped with bananas or blueberries; Mini Waffles of Love with cinnamon brown sugar inside; and fruit smoothies. In homage to celebrity chef Aáron Sanchez, who created the Crossroads at House of Blues menus, diners may also order The Sanchez, packaged to eat at Crossroads or to-go featuring a 24-ounce can of Bud Light in a brown paper bag served with a breakfast burrito.
